Sea Bass Ceviche with Mango for my Dad

Method

  • Chop fish fillet to small cubes.
  • Mix gently all the ingredients.
  • Cover and let the mixture marinade in the fridge for 1 hour then stir again gently.
  • Let the dish site again for a few hours.
  • Serve on a large plate or shape in to a tidy little portion in a small espresso cup and then turn onto a plate.
  • Serve with warm fresh bread.

  • Ingredients

    • 1 large Mango cut to small cubes
    • 400g Sea Bass Fillet
    • ½ cup Coriander chopped
    • 1/3 cup Olive oil
    • 1 Chilli chopped
    • 1-2 Lime juice
    • 3 tbsp Basil chopped
    • 1 medium Purple onion chopped
