1. Chop up the bacon and fry until crisp, and then add to the shelled and briefly blanched broad beans.
2. Make a simple dressing with equal amounts of lemon juice and extra virgin olive oil, then mix in some roughly chopped fresh mint. Stir this into the bacon and beans.
3. Serve on a bed of leaves, rocket my favourite with fresh crusty bread.
4. Can serve hot or cold.
