Halloumi with Broad Beans

Method

  • 1. Heat a little oil in a saucepan and fry the onion until just soft but not coloured. Add the other ingredients except the mint and halloumi, plus 2 tbsp water. Cover and simmer gently for 5 minutes. Stir in the mint.

  • 2. Meanwhile grill or bbq the halloumi slices until they are golden. Serve the broad beans hot or cold with the halloumi slices and fresh crusty bread.

    • Halloumi is a lovely cheese made from a mixture of sheep and goats milk. It is quite a heavy cheese, usually white or a light yellow in colour and has a “rubbery” texture. This cheese does not melt easily therefore it is perfect for barbecues, grilling in the oven or for frying. This is a popular cheese all over the Middle East and is said to have originated in Cyprus.
