Method

  • 1. Sieve the flour and corn-flour. Then peel the bananas and mash to a fine pulp.

  • 2. Cream the fat and sugar, then add the eg-yolk and stir the mixture quickly for a few minutes.

  • 3. Stir in the mashed bananas, flour and corn-flour, also add a few drops of vanilla flavouring, and mix all together to a stiff paste.

  • 4. Turn it onto a floured board and roll out. Cut into strips about 6 or 7 inches long and 3/8 of an inch wide. Twist each strip and cross the two ends.

  • 5. Place on a slightly buttered tray, put it in a moderate oven, and bake gently until biscuit colour. They will take about 15minutes, but decide when cooking.

    • 2 oz. castor sugar
    • 3 oz. margarine
    • 7 oz. flour
    • 1 egg-yolk
