The Basics

  • Dish: Dessert and Sweets
  • cuisine: Other
  • Serves: 5
  • Prep Time: 0hrs 5 mins
  • Cooking Time: 0hrs 12 mins

Ingredients

  • 6 oz. flour
  • ¼ flat tbs. carbonate soda
  • 1.5 flat tbs. ground ginger
  • few almonds
  • 1 oz. Barbados sugar
  • 1.5 oz.  margarine
  • 2 dessertspoonfuls golden syrup (or more if required)
  • 1 tbs. treacle

Method

1. Sift the flour into a basin with the carbonate of soda and ground ginger.

2. Put the margarine in a saucepan with the treacle, golden syrup, and sugar. Dissolve them slowly but do not boil. Take the saucepan off the gas and cool the syrup before adding it to the flour.

3. Mix it to a stiff paste, adding a little syrup if required. Then work it into a smooth dough and roll it out.

4. Stamp it into rounds and place them on a baking-sheet. Press half a blanched almond in the centre of each biscuit and bake them in a very moderate oven for from ten to twelve mintues.
