1. To make the dressing, place the vinegar, mustard, seasoning and sugar in a bowl and then whisk in the oil.
2. To prepare the salad, peel and quarter the pears and then cut into cubes. Place the butter in a large frying pan and fry the pears on both sides. When brown set aside
3. Add honey to the remaining butter and add in the walnut halves and glaze thouroughly.
4. Cut the cheese into bite size chunks.
5. Put the salad leaves onto a flat dish and assemble the pears, cheese and walnuts on top and then drizzle over the dressing.
