1. Put the macaroni into boiling water and let it boil for 1/2 hour. Strain off the water, add milk, let it simmer for an hour, occasionally stirring.
2. Take it out, place part on a flat dish, sprinkle over some cheese, then season it (with the salt, pepper and cayenne), put more macaroni on top, more cheese, and so on. Then, pour the milk, which should be much redcued in quantity, over the whole.
3. Cut the butter into little pieces and place it on top. Brown it with a salamander or in a hot oven. Serve very hot.
Note - Tomato puree is a great improvement; put it into the macaroni before the cheese is added.
