  • 2 tsp Salt
  • 1 tsp Ground Cayenne Pepper

  • 1 tblsp Prepared Horseradish
  • 1 tblsp Wine Vinegar

Mix all ingredients together in a large flat bowl. Put in the meat and make sure it is well coated in sauce. Leave the meat overnight in the fridge and cook when the fire is ready. This marinade is also great as a basting sauce for the meat while it cooks.

Hi Kenny,
I've never used this recipe, but I can imagine it is wonderful. Apparently beer makes an interesting addition to a batter for fish. It makes the batter lighter as well a giving it a great taste.
It's also good for a hair rinse!!! Or so I'vew heard. Haven't tried that though either.

This looks gooooood. My partner uses beer to baste the meat whilst it is cooking on the bbq - keeps it from drying out.

I'll definitely be trying this one.
