Fry vegetables and mix with eggs and seasoning. Put mixture between the layers of matzo with grated cheese and spinkle cheese on top. Brush top with oil. Bake in moderate oven for 1/2 hour. Freezes well.
Delighted for you but please bear in mind that it doesn't look like the photo cos it is made with matzo - but it tastes really good according to my veggie friends.
