The Basics

Ingredients

  • 12 lb. tomatoes
  • 2 lb onions
  • 2 oz garlic
  • ½ oz cloves
  • 1 oz ground ginger
  • 6 oz salt
  • 6 oz cayenne (pepper) (for taste)

Method

1. Chop the onions and garlic. Boil all ingredients together for 2 hours. Pass through a fine sieve.

2. When cold add 1 quart of best vinegar and 1/2 lb of brown sugar. Boil again until it is as thick as cream. Bottle and seal when cold.
