    Ingredients

    • 2 thinly sliced yellow pepper
    • 2 sliced onions
    • 2 sliced garlic cloves
    • handful pitted olives
    •  chopped sprig rosemary
    • 800g can chopped tomatoes
    • 4 tbsp. olive oil
    • 600g pack beef stir-fry strips

    Method

    • 1. In a large saucepan, cook onion and garlic in olive oil for 5 minutes until softened and turning golden. Tip in the beef strips, pepper, tomatoes and rosemary, then bring it to boil. Simmer for 15 minutes until the meat is cooked through, adding some boiling water if needed. Stir through the olives and serve with mash or polenta.
