Passover Fried Vegetable Casserole

    Ingredients

    • To taste Salt and pepper
    • 1 clove Minced Garlic
    • 2 Grated Onions
    • 1.5 lbs Sliced mushrooms
    • 1.5 lbs Grated Carrots
    • 3 Eggs
    • 1.5 lbs Grated Courgettes
    • 0.25 cup Oil
    • 2 teaspoons Potato Flour
    • 1.5 cups Medium Matzo Meal

    Method

    • Mix all ingredients together. Put into a 9" greased square casserole dish or foil container. Cover and bake for 15 minutes at Gas 6 or 200C. Turn down to Gas 3 or 150C for next hour. If feezing or reheating later, don't finish the cooking leave at least 30 minutes to heat up. This can be made substituting breadcrumbs and cornflour for the Matzo Meal and Potato Flour.
