Method

  • 1)cut the lamb into 1in cubes and place in a shallow glass dish.
  • 2)mix together the hoisin sauce,soy sauce,garlic and ginger in a bowl and pour over the lamb,turning to coat well.leave to marinate in the refrigerator for 20 minutes.
  • 3)heat the vegetable oil in a preheated wok.add the lamb and stir-fry for 1-2 minutes.
  • 4)add the onion add fennel to the wok and cook for a ferther 2 minutes,or until they are just beginning to brown.
  • 5)stir in the water ,cover add cook for 2-3 minutes.
  • 6)to make the sauce ,place the chillies,rice wine vinegar,sugar,peanut oil and sesame oil in a saucepan and cook over a low heat for 3-4 minutes,stirring to combine.
  • 7)transfer the lamb and onions to a warm serving dish,pour the sauce on top,toss lightly and serve immediately.

    • 1lb Lean boneless lamb
    • 2tbsp Hoisin sauce
    • 1tbsp Dark soy sauce
    • 1clove Garlic crushed
    • 2tsp Fresh root ginger grated
    • 2tbsp Vegetable oil
    • 2 Onions sliced
    • 1 Fennel bulb sliced
    • 4tbsp Water

    • 1large Fresh red chilli,cut into strips
    • 1 Fresh green chilli,cut into strips
    • 2tbsp Rice wine vinegar
    • 2tsp Light brown sugar
    • 2tbsp Peanut oil
    • 1tsp Sesame oil
