White Chocolate and Blueberry Muffin

Ingredients

  • 225g plain flour mixed with 75g golden caster sugar 3/4 tsp baking power and a pinch of salt
  • 1.5 beaten egg
  • 75g melted and cooled butter
  • 150ml milk
  • 113g blueberries
  • 113g white chocolate chopped into chunks

Method

1. Heat the oven to 200C/fan 180C/gas 6 and line a 9-hole muffin tin with paper cases. Mix the egg, melted butter and milk quickly into the dry ingredients with the blueberries and chocolate (don't overmix, it should be a bit lumpy).

2. Divide between the cases and bake for 25 minutes until risen and golden and cooked through.
