Method

  • For Chocolate Cookies:

  • Preheat oven to 190 degrees C and place oven rack in the center of the oven. Line two baking sheets with parchment paper.

  • In a large bowl sift together the flour, cocoa powder, baking powder, and baking soda. Set to the side.

  • In a seperate bowl beat the stork and sugar till light and fluffy. Add the egg beating well. Beat in the vanilla.

  • In a small measuring cup mix the buttermilk and coffee(or water).

  • Slowly mix in half the flour mixture. Then add the buttermilk mixture. Finish adding the flour mixture.

  • Drop batter using a spoon (which ever size you are looking to make). I use a tablespoon. Onto the baking sheet about 2 inches apart. With moistened finger smooth the tops of the cookies.

  • Bake for 9-10 minutes for tablespoon size (about 5 minutes for teaspoon size) or until the tops of the cookies when lightly pressed spring back. Remove from oven and transfer to a wire rack for cooling.

  • Frosting Filling:

  • Beat the Trex and butter until soft and creamy. Gradually beat in the icing sugar. Beat on high speed for about 5 minutes. Beat in the vanilla and slowly drizzle in the golden syrup. Continue to beat until the filling looks like soft mayoniase.

  • Assemble:

  • Take one cookie and spread a heaping spoonful of filling on the flat side of the cookie. Top with another cookie.

  • Makes about 15 sandwhich cookies for tablespoon size about 30 for teaspoon size.

    • ½ cup Golden Syrup
