Trout with Steamed New Potatoes

Method

  • 1) Drizzle the fish fillets with olive oil and lemon and season lightly.

  • 2) Place the washed and cut potatoes in a steamer over a pan of boiling water and steam for 10-15 minutes - until cooked through, then add butter.

  • 3) Heat a griddle or frying pan over a high flame, then quickly cook the fish - approx. 2 minutes for each side

  • 4) Serve with a glass of wine!
  • Ingredients

    • 2 x 200g / 8 oz fillets of rainbow trout - or you could substitute with salmon or lemon sole
    • 1 tablespoon olive oil
    • Juice 1 whole lemon
    • Pinch or two sea salt
    • 300g / 12 oz new potatoes washed and halved
    • 25g / 1 oz unsalted butter
