Honey Apple Cake

Method

  • 1. Preheat the oven to 180C/350F/Gas mark 4. Grease a 12cm cake tin and line it with baking parchment. Whisk together the honey, apple juice, orange juice and zest, oil, coffee and eggs until well combined.

  • 2. Mix the flour, bicarbonate of soda, baking powder and cinnamon in a seperate bowl then gradually add the dry mixture to the wet ingredients. Stir in the apples and raisins. Bake for 1 1/4 hours or until the centre is firm to the touch. Invert the cake on to a serving plate and dust with icing sugar.

    • 170g orange blossom honey
    • 2 tbsp apple juice
    •  juice and grated zest of 1/2 large orange
    • 2 tbsp vegetable oil plus extra for greasing
    • 60ml strong coffee
    • 1.5 eggs
    • 150g plain flour
    • ½ tsp bicarbonate of soda
    • 1 tsp baking powder
    • 1 tsp ground cinnamon
    • 1 apples peeled and roughly chopped
    • 55g raisins
    •  icing sugar for dusting
