1. Preheat the oven to 180C/350F/Gas mark 4. Grease a 12cm cake tin and line it with baking parchment. Whisk together the honey, apple juice, orange juice and zest, oil, coffee and eggs until well combined.
2. Mix the flour, bicarbonate of soda, baking powder and cinnamon in a seperate bowl then gradually add the dry mixture to the wet ingredients. Stir in the apples and raisins. Bake for 1 1/4 hours or until the centre is firm to the touch. Invert the cake on to a serving plate and dust with icing sugar.
