Chocolate Apple Dessert

Method

  • 1. Preheat the oven to 180C/350F/Gas mark 4. Grease a 11cm loose-base cake tine with the margarine and line the base with baking parchment. Whisk the eggs, icing sugar and vanilla sugar in a mixing bowl until the mixture is pale and think. Stir in the apple, raisins, flour, baking powder and nuts.

  • 2. Bake in the oven for 1 hour or until the cake is firm to the touch in the centre and golden brown. Remove from the cake tin and transfer on to a plate for 30 minutes before adding the topping.

  • 3. For the topping, place the chocolate and margarine in a double-boiler and heat gently, sitrring, until both have melted. Spread the jam over the top of the cake, then pour over the chocolate topping. Chill in the fridge for 2 hours until the topping has set, or overnight.

    • ½ tbsp margarine or oil for greasing
    • 3 eggs
    • 170g icing sugar
    • 1.5 tsp vanilla sugar
    • 375g eating apples peeled cored and grated
    • 55g raisins
    • 150g plain flour
    • 1 tsp baking powder
    • 55g walnuts chopped
    •  FOR THE CHOCOLATE TOPPING:
    • 75g plain chocolate
    • 37g margarine
    • 1 tbsp apricot
    • 1 tbsp apricot or raspberry jam
