Healthy Apricot Oat Jack

Method

  • 1) Preheat oven to 180C / 350F / Gas Mark 4.

  • 2) Grease and line the base of a square or round 20cm baking tin.

  • 3) Put the chopped apricots, apples and orange juice into a small saucepan. Cook for 10-20 minutes - or until soft.

  • 4)Sieve the flour into a large bowl, rub in the butter until it resembles fine breadcrumbs. Add in the sugar and oats and mix well. Put half the mixture into an ovenproof dish and flatten with the back of a wooden spoon.

  • 5) Cover with the fruit, then spoon the remaining mixture on top.

  • 6) Cook for 30 minutes. Leave to cool. Cut into 16 bars (or traingles, if the tin is round!)

  • 7) Put the kettle on and enjoy with your family and friends!

    • very tasty recipe however it isnt gluten free as the oats used are just standard oats.
      A little disappointing for all us Coeliac Sufferers who truly are limited by things like flours sauces oats and so called gluten free mixes.
      Perfect for non suffers though so 10 out of 10 for taste

    • 150g unsalted butter - cut into small cubes chilled
    • 500g dried apricots roughly chopped
    • 2 pieces apples peeled cored and chopped
    • Juice of 3 oranges
    • 250g plain flour
    • 90g light soft brown / demerara sugar
    • 125g oats
