1 - Brown the Minced beef and onions in a pan, after around ten minutes, add the grated carrots and crumble in the stockcube. Add enough water to cover the mince and leave to simmer for a few minutes.
2- Place the potato and swede in a pan of water, bring to the boil and cook until ready to mash. Drain and mash with butter, salt and pepper. Set aside until the meat is ready.
3- Add the baked beans to the mince along with the peas. Take off the heat and transfer to a large oven proof dish.
4- Top the mince with the mash - with a fork make the topping rough and raised, drizzle with a little olive oil, this will help it get crispy. You can also add some grated cheese.
Bake in a medium oven for 30 minutes. Serve with brocolli or veg of choice.

I add grated carrot to most saucy things now - always trying to get some extra veg in a meal somehow! Works really well in bolognaise too.
