Chickpea Curry - Chana Masala

The Basics

Ingredients

  • 1 tin Chickpeas - drained
  • 1 tbs Oil
  • 1 Onion - chopped
  • 1 Clove garlic -crushed
  • 1 tbs Chana Masala curry powder
  • 2 Tomatoes chopped
  • 1 Cup water
  • 1 Unwaxed Lemon - quartered

Method

1 - Gently fry the onions, taking care not to over cook, after a few minutes, add the garlic. When this has softened, add the chana masala curry powder (Note - this is available in most large supermarkets now).

2- Add your lemons & tomatoes to the pan, make sure you have removed all pips from the lemon. If unwaxed lemons are not available, give your lemon a good scrub under hot water to remove as much was as possible.

3- Add you chickpeas to the pan and slowly add some water a little at a time. You want your dish to be quite dry, but may need to stop the dish sticking.

4 - Lower the heat and allow to simmer for a few minutes until the tomatoes have softened.

Done! This is lovely served with plain rice or some homemade chapati. You can also add some spinach if you have it available. It would just need 2 mins towards end of cooking to wilt down.

The Story Behind The Recipe

This is such a tasty dish and so simple to make. I often make this as an addition to a big curry feast - it tastes lovely with minty yoghurt and it's very healthy. The lemons give it a delicious twist.
