Method

  • 1) Preheat oven to 425F

  • 2) Combine soymilk and vinegar and set aside. Stir the dry ingredients together in a large bowl, then add in the soymilk mixture and mix until just blended. Spread evenly in a baking dish that has been lightly sprayed with a nonstick spray and bake for 25 - 30 minutes.

  • 3) Serve hot with butter.

    • 1 .5 cups soymilk
    • 1.5 tablespoons vinegar
    • 1 cup cornmeal
    • 1 cup unbleached or whole wheat pastry flour
    • 2 teaspoons low-sodium baking powder
    • 0.5 teaspoon baking soda
    • 0.5 teaspoon salt
