Ingredients

  • 4 large potatoes diced
  • 0.5 cups soymilk
  • 0.5 teaspoon salt
  • 0.5 cups water or vegetable stock
  • 2 onions diced
  • 1 large pepper diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 0.5 pound (approx. 2 cups) mushrooms sliced
  • 1 can chopped tomatoes
  • 1 can kidney beans drained
  • 0.5 teaspoon paprika
  • 0.5 teaspoon black pepper
  •  
  • 2 tablespoons soy sauce

Method

1) Dice the potatoes and steam them until tender. Mash them, adding enough soy milk to make them smooth and spreadable. Add a pinch of salt to taste and set them aside.

2) In a large pot, heat the water / stock and cook the onions for 3 minutes. Add the peppers, carrots and celery and cook for 5 minutes over a medium heat. Add the mushrooms, then cover the pan and cook for an additional 7 minutes, stirring occasionally. Add the tomatoes, kidney beans, paprika, pepper and soy sauce - cover and cook for 10 - 15 minutes.

3) Preheat oven to 350F.

4) Put the vegetables into a baking dish, spread the mash evenly on top, sprinkle with paprika, bake for 25 minutes until hot and bubbly (cheese sprinkled on top of mash optional)

5) Invite your mates round and serve piping hot!
