Method

  • 1) Dice the potatoes and steam them until tender. Mash them, adding enough soy milk to make them smooth and spreadable. Add a pinch of salt to taste and set them aside.

  • 2) In a large pot, heat the water / stock and cook the onions for 3 minutes. Add the peppers, carrots and celery and cook for 5 minutes over a medium heat. Add the mushrooms, then cover the pan and cook for an additional 7 minutes, stirring occasionally. Add the tomatoes, kidney beans, paprika, pepper and soy sauce - cover and cook for 10 - 15 minutes.

  • 3) Preheat oven to 350F.

  • 4) Put the vegetables into a baking dish, spread the mash evenly on top, sprinkle with paprika, bake for 25 minutes until hot and bubbly (cheese sprinkled on top of mash optional)

  • 5) Invite your mates round and serve piping hot!

    • 0.5 cups water or vegetable stock
    • 2 onions diced
    • 1 large pepper diced
    • 2 carrots sliced
    • 2 celery stalks sliced
    • 0.5 pound (approx. 2 cups) mushrooms sliced
    • 1 can chopped tomatoes
    • 1 can kidney beans drained
    • 0.5 teaspoon paprika
    • 0.5 teaspoon black pepper
    • 2 tablespoons soy sauce
