Yummy Yam Pudding

Ingredients

  • 2 medium yams
  • 1/3 cup sugar
  • 3 tablespoons cornstarch
  • 0.5 teaspoon cinnamon
  • ¼ teaspoon ginger
  • 1/8 teaspoon cloves
  • 1/8 teaspoon salt
  • 1.5 cups soymilk

Method

1) Peel the yams and cut them into chunks. Steam them in a covered saucepan over boiling water, until tender. Try piercing them with a fork to check tenderness (steaming time approx. 40 minutes).

2) Mash the yams when steamed - this should make approximately 2 cups full.

3) Preheat the oven to 350F.

4) In a mixing bowl, whisk together the sugar, cornstarch, spices and salt, and then stir in the soymilk and mashed yams.

4) Pour mixture into a ready-made / standard pie crust and bake for approximately 35 minutes.

5) Cool before cutting and serving for dessert.
