Bolognese Sauce

The Basics

Ingredients

  • 45 ml Olive Oil
  • 1 Finely chopped onion
  • 1 Finely chopped carrot
  • 1 clove Finely chopped garlic
  • 1 Stick Finely chopped celery
  • 80g Lean minced beef
  • 110ml or less Red Wine
  • 396g Tomatoes
  • 225ml Stock
  • 30ml Tomato puree
  • To taste Freshly grated nutmeg
  • To taste Salt
  • To taste Freshly ground pepper

Method

1. Heat the oil and gently cook the onion, carrot, garlic and celery until softened.

2. Add the beef and stir until evely browned.

3. Add the wine, tomatoes, stock, puree and the nutmeg.

4.Cover the pan and simmer gently for 30-40 mins, adding a little water if the mixture starts to stick.

5.Taste and add the salt and pepper.
