1. Heat the oil and gently cook the onion, carrot, garlic and celery until softened.
2. Add the beef and stir until evely browned.
3. Add the wine, tomatoes, stock, puree and the nutmeg.
4.Cover the pan and simmer gently for 30-40 mins, adding a little water if the mixture starts to stick.
5.Taste and add the salt and pepper.
