Remove any skin from the cooked chicken and place the whole chicken in a large saucepan. Cover the chicken with water and add all the ingredients minus the macaroni to the pan. Bring to the boil and simmer gently for around 30 minutes.
Test the carrots & onions to see if nearly cooked, then add the dry macaroni and leave again for 15 minutes. Taste the soup and season again if necessary.
Remove the chicken (careful at this stage as the bones will fall apart and will be HOT) Take the meat off the bones and put back in the soup, discard all the bones.
This is great with some crusty bread.

I always made this soup for my family a couple of days after we'd had a roast chicken. We'd often have a chicken risotto the day before and the remaining chicken which was left was just the right amount to make this soup.
It became a favourite with my daughter and she requested I made it for her whenever she was feeling unwell.
A delicious broth!
