1. Sift flour into large bowl and make a well (hole) in the center)
2. Break the eggs into the well. Stir the flour and eggs, adding water when necessary to make a soft dough.
3. When finished, make the dough into a ball and knead it on a floured surface until it feels firm and elastic. This should take about 10 minutes.
4. Divide dough into two or more pieces and, on a floured surface, roll each out as thin as possible without breaking it. You should be able to see the grain of a wooden table through it. (The grain is the markins on the wood)
6.Leave the sheet to dry for 30 minutes, then roll them up into a scroll shape. Cut the pasta as desired.
7.Spread the cut pasta out on a cloth or racks to dry until needed for cooking.
