Sausage and Potato Pancake

Ingredients

  • 1lb Cooked potato
  • ¼lb Sausage meat
  • 1tbs Chopped parsely
  • ½ tbs Mixed herbs
  • To taste Salt Pepper
  • 2tsp Oil
  • Dash Milk

Method

1 - Mash the potato with the sausage meat, add the herbs, seasoning and milk and mix well.

2 - Heat your oil in a frying pan and spread the mixture to form a pancake. Cook until brown on the base, turn onto a plate and slide the uncooked side back into the pan. Cook until crispy.

If the sliding out of the pan looks too tricky, you can cook this in the oven, spread to a thin pancake and spray with cooking oil to get a crispy outside.

Good with beans or veg of choice.
