1- Add the macaroni to a pan of boiling water, cook for 10 mins until just cooked. Drain into a colander and leave to one side while you make the sauce.
2- Melt the butter in a saucepan and add the flour. Stir well the gradually add the milk whilst stirring well and allowing the sauce to thicken between each addition of milk.
3- Add the mustard, seasoning and two thirds of the cheese. Add the macaroni and transfer to an oven proof dish, top with the remaining cheese and heat through in the oven for around 20 minutes.
Serve with a salad or veg of choice.
For non vegetarian option, you can add crispy bacon - also tastes great with sliced tomatoes on top.
