1- Gently fry the onions until softened, add the garlic, celery, carrots and pepper and herbs and cook on a low heat until they have softened.
2- Add the tins of tomatoes and cook slowly (with a lid added), stirring every so often. Add your sugar and seasonings and taste. Add more seasoning if needed.
3 - Blitz the sauce and freeze individual portions for future use. This is a great standby and children love it - even though it's packed full of veggies!
If you don't want to freeze, just reduce the quantities listed here.

Like most parents, I am always trying to ensure to my children eat enough fruit and veg. To be honest, they love fruit, so no worries there. But my son went from eating vegetables to saying "yuk!"whenever presented with anything looking remotely veg like, so I started making this vegetable based sauce for pasta, and also as a base for bolognaise and mild chili. He loves the sweet peppers and I know that he's getting a good amount of nutrients in his meal.
It freezes really well too and makes a great sauce for lasagne.
