1. Break the chocolate in to a bowl. Add the water. Heat some more water in a pot or saucepan until simmering.
2. Satnd the bowl over the pot/saucepan. When the chocolate melts, stir it until smooth, then put it to one side. Do NOT let it set.
3. Separate the egg whites from the yolks. Be carful not to mix the whites and the yolks.
4. Beat the egg yolks until smooth, then slowly stir them into the chcolate.
5. Add a pinch of salt to the egg whites and whisk them until the feel fluffy and look like snow topped mountains.
6. Mix the chocolate with the egg whites. Do not beat the mixture.
7. Carfully pour the mousse into a serving bowl and leave it in the fridge for a few hours until it has set. When it has set, pour some cream ontop and add some grated milk chocolate flakes on top of the cream
