1)cut the spare ribs into separate pieces if they are joined.
2)mix together the soy sauce,hoisin sauce,chinese rice wine or sherry,chinese five spice powder,dark brown sugar,chilli sauce and garlic in a large bowl.
3)place the ribs in a shallow dish and pour the mixture over them,turning to coat them well.cover and marinate in the refrigerator,turning the ribs from time to time,for a least one hour.
4)remove the ribs from the marinade and arrange them in a single layer on a wire rack placed over a roasting tin half filled with warm water.brush with the marinade,reserving the remainder.
5)cook in a preheated oven,at gas mark 4,for 30 minutes,remove the roasting tin from the oven and turn the ribs over.brush with the remaining marinade and return to the oven for a further 30 minutes,or until cooked through.
6)transfer to a warmed serving dish,garnish with the coriander sprigs and serve immediatly.
