Classic Spare Ribs

Method

  • 1)cut the spare ribs into separate pieces if they are joined.
  • 2)mix together the soy sauce,hoisin sauce,chinese rice wine or sherry,chinese five spice powder,dark brown sugar,chilli sauce and garlic in a large bowl.
  • 3)place the ribs in a shallow dish and pour the mixture over them,turning to coat them well.cover and marinate in the refrigerator,turning the ribs from time to time,for a least one hour.
  • 4)remove the ribs from the marinade and arrange them in a single layer on a wire rack placed over a roasting tin half filled with warm water.brush with the marinade,reserving the remainder.
  • 5)cook in a preheated oven,at gas mark 4,for 30 minutes,remove the roasting tin from the oven and turn the ribs over.brush with the remaining marinade and return to the oven for a further 30 minutes,or until cooked through.
  • 6)transfer to a warmed serving dish,garnish with the coriander sprigs and serve immediatly.

    • 2lb Pork spare ribs
    • 2tbsp Dark soy sauce
    • 3tbsp Hoisin sauce
    • 1tbsp Chinese rice wine or dry sherry
    • pinch Chinese five spice powder
    • 2tsp Dark brown sugar
    • ΒΌ tsp Chilli sauce
    • 2cloves Garlic,crushed
    •  Coriander sprigs to garnish
