Stuffed Jacket Potatoes

The Basics

Ingredients

  • 4 Large floury potatoes
  • 4oz Strong cheddar - grated
  • Knob Butter
  • 3oz Chopped ham (omit for veg option)
  • Splash Milk
  • To taste Salt Pepper
  • 1 tbs Chopped chives (opt)

Method

1 - Bake the potatoes at gas mark 6 for 1 1/4 - 1 1/2 hrs.

2 - Cut the cooked potatoes in half, scoop out the flesh and place in a bowl. Mash the potato with all the other ingredients, saving a little cheese.

3 - Fill the potatoes with the mash, sprinkling with the remaining cheese.

4 - Put back in the oven for around 15 minutes or until they are starting to crisp.

VARIATION: You can also make a hollow in the middle and add a raw egg, bake as above for a more substantial filling.

Top with chopped chives if using.
