Stuffed Jacket Potatoes

Method

  • 1 - Bake the potatoes at gas mark 6 for 1 1/4 - 1 1/2 hrs.

  • 2 - Cut the cooked potatoes in half, scoop out the flesh and place in a bowl. Mash the potato with all the other ingredients, saving a little cheese.

  • 3 - Fill the potatoes with the mash, sprinkling with the remaining cheese.

  • 4 - Put back in the oven for around 15 minutes or until they are starting to crisp.

  • VARIATION: You can also make a hollow in the middle and add a raw egg, bake as above for a more substantial filling.

  • Top with chopped chives if using.

    • 3oz Chopped ham (omit for veg option)
    • Splash Milk
    • To taste Salt Pepper
    • 1 tbs Chopped chives (opt)
