1. Roast the chicken portions covered in sivler foil for 20 mins at 200C/400F/Gas 6. Uncover and tip away the juices.
2. Dice thhe onion and saute in the oil. Add the remaining ingredients, remove from the heat. Spoon sauce over the chicken, return to oven and roast uncovered for 10mins uncovered. For the next 10 mins, cover it with foil so it can soak up the juices.
