Chicken with Honey and Rosemary

Ingredients

  • 4-5lb roasting chicken
  • 3-4 oz water
  •  Salt and Pepper
  •  Clear honey
  •  Fresh or dried rosemary

Method

Preheat oven to 200 degrees. Place chicken in roasting dish. Season to taste with salt and freshly ground black pepper. Drizzle clear honey (easiest to use a dispenser bottle) all over the chicken and sprinkle with the rosemary. If using fresh rosemary, place a large sprig inside the cavity of the bird. Put water in bottom of roasting tin. Cover with silver foil and put in oven.

After 45 mins, remove silver foil and turn chicken over to allow base to brown. After a further 15 mins, turn chicken again to allow top to brown.

Serve with couscous mixed with chopped lightly browned onions and choose any green vegetable.
