Asparagus & Duck Egg with Parmasan

Ingredients

  • 1-2 pks Asparagus
  • 4 Duck Eggs
  • 1 Tub Flaked Parmasan
  • A drizzle Balsamic Vinegar
  • A drizzle Olive Oil

Method

Warm the plates.

Trim aspsragus and set to one side. Boil a pan of water, enough to cook all the asparagus at the same time. Place the asparagus in the water. Be careful not to over cook it, turn it down to a simmer if it is thin asparagus.

Fry the eggs in a little olive oil.

tip: I tend to gently heat the frying pan on a low heat, crack the eggs in and cook until they just start to turn white. Then place them under a hot grill in the frying pan.

Arrange the asparagus equally on each warmed plate and drizzle the balsamic vinegar over in an artistic way. Place the eggs on top of the asparagus and scatter the flaked parmasan over the top.
