The Basics

  • Dish: Baking
  • cuisine: English
  • Serves: 6-8
  • Prep Time: 0hrs 15 mins
  • Cooking Time: 0hrs 10 mins

Ingredients

  • 4oz Self raising flour
  • 1tsp (rounded) Ground ginger
  • 1tsp Bicarbonate soda
  • 1 ½oz Granulated sugar
  • 2oz Butter
  • 2oz Golden Syrup

Method

Sift the flour, ginger and bicarb soda into a bowl. Add the sugar and lightly rub in the butter.

Add syrup and mix to a smooth paste.

Roll into 16 balls and place on a greased baking tray. I normally need to use 2 trays for this. Make sure you leave plenty of space between the biscuits as they will spread out.
Flatten each biscuit slightly.

Cook for around 10 minutes at gas . If using 2 trays and they are on 2 shelves, swap them over at 5 mins to ensure they are both cooked.

Take out of the oven and cool. Enjoy!

The Story Behind The Recipe

My grandma never really enjoyed cooking but was fantastic at baking sweet things. Obviously as children this was fabulous! We never complained that we had a never ending supply of freshly baked biscuits. These were one of my favourites. I always called them 'Grandma's chewy ginger biscuits' and I meant that in the best way, they are so chewy yet light and moreish. I was so pleased when I first made them and they turned out just like Grandma's.
