Mango Chutney Lamb with Rocket Snap Pea Salad

Method

  • 1)combine yoghurt,chutney and chilli sauce in large bowl.
  • 2)griddle-fry,grill or barbecue lamb,brushing with the yoghurt mixure frequently,until browned on both sides and cooked as desired.
  • 3)meanwhile boil,steam or microwave peas until just tender,rinse peas under cold water,drain.toss peas and rocket in large bowl with combined oil and vinegar.
  • 4)serve rocket snap pea salad with lamb and new potatoes.

    • 80ml Yoghurt
    • 80ml Mango chutney
    • 80ml Mild chilli sauce
    • 12 Lamb cutlets
    • 250g Sugar snap peas
    • 150g Rocket,trimmed
    • 60ml Olive oil
    • 2tbsp Balsamic vinegar
    •  New potatoes to serve
