Ingredients
- 4 Courgettes - thinly sliced
- 2 Cloves chopped garlic
- 4-5 Freshly chopped tomatoes
- To Taste Salt Pepper
Method
It's very simple to prepare;
Gently saute the chopped garlic, chopped tomatoes and thinly sliced courgette in a pan until tender.
Serve hot! We loved it so much we even used to make my dad cook it with a roast dinner (with gravy!).

The Story Behind The Recipe
My favourite dish is a thing called "Doshy Courgette" - my dad "invented" it - well he claims to have and for some reason my brother and I gave it the name "Doshy Courgette".
It reminds me of my family and it makes me feel loved. For me that dish sums up just how great it was growing up in the Marsh household and having such a fab mum, dad and brother! As a family we don't stop laughing and even naming that dish "doshy courgette" brought about heaps of laughter. Dinner time for us was always about (and still is!) sitting down together, talking, laughing and eating freshly prepared, healthy food that had been lovingly cooked by our parents!
