Clean the mussels in cold water and remove any beards discarding the broken mussels and any that do not close.
dice the shallots or onions and saute in a wok or large pan
add the mussels and stir
add the white wine and stir
add the tinned tomatoes
this dish should take under 6 minutes to cook.
take care not to over cook the mussels, once the shells open they are cooked.
serve in a pasta dish
the bread tastes great dipped in the sauce.
add great company for a fantastic quick meal.
you can leave the white wine out if you do not wish to use alcohol.
