Chicken and Chive Risotto

Ingredients

  • 1 thinely sliced leek
  • 440g chicken breast thinly sliced
  • 2 cups rice
  •  olive oil spray
  • 4 cups liquid chicken stock
  • 1 cup skimmed milk
  • 2 tbsp grated lemon rind
  • 3 tsbp snipped fresh chives
  •  salt and pepper for seasonings

Method

1. Heat a pan that has been sprayed with oil. Cook the leek for 2-3 minutes on medium heat

2. Add the chicken, cooking and stirring until it starts to brown

3. Stir the rice into the mixture, cooking for 1 minute

4. Add the stock, milk and lemon to the mixture. Let it simmer for 25 minutes, stirring occasionally

5. Add the chives and season with salt and pepper: cook for 5 minutes. Then serve and enjoy!
