1. Heat a pan that has been sprayed with oil until the oil is heated
2. Cook the chicken in the oil for 5 minutes until cooked through. Allow it to cool before cutting it into fine slices
3. Heat another saucepan of oil, letting the oil heat up. Add the onions and cook for 2 minutes on medium heat
4. Add the ginger and pepper, allowing it to cook for another minute
5. Add the chicken stock, the corn and cooked chicken to the pan with the onions, ginger and pepper. Allow it to boil before reducing the heat and letting it simmer for 5 minutes.
6. Before serving, add the parsley to the soup. Then serve, eat and enjoy!
This soup goes absolutely perfectly with foccacia bread!
