1. Preheat oven to 180°C/350°F
2. Spread the jam over the slices of bread before cutting each slices into quarters, diagonally
3. Place the slices in layers in a 2 litre ovenproof dish
4. Whisk the egg whites, milk and custard together and pour the mixture over the bread, soaking each piece
5. Bake for 30-40 minutes. Cover surface with foil if the pudding is becoming too browned.
