Cheese Biscuits

The Basics

Ingredients

  • 8oz Plain flour
  • 4oz Butter
  • 3oz Mature cheddar - grated
  • Pinch Salt
  • 4-5tbs Cold water

Method

Preheat oven to Gas mark 6

Sieve the flour & salt and gently rub in the butter until it looks like breadcrumbs. Add the grated cheese and slowly add the water a little at a time until you have a firm dough.

Flour your work surface and kneed out the dough. With your pastry cutter, cut out into shapes or you may choose to cut the dough into straws.

Keep collecting the offcuts of dough and rolling out as necessary.

Place on a greased baking tray.

Bake your biscuits for around 12 minutes, keep an eye on them to ensure they don't burn.

Delicious and so easy to make.

The Story Behind The Recipe

We always make these with any leftover pastry from our jam tarts. But sometimes, when the craving for some cheesy treats hits us - we make the full amount from this recipe.

My father adored cheese and it appears to be a family trait, as when I made these recently with my grandson, he ate more of the grated cheese than ended up in the biscuits! They still tasted lovely though.

Perfect for a party, they are delish with a drink or 2.
