Method

  • 1. Pre-heat the oven to fan 170c/conventional 190c/gas 5. Put the chicken breasts, skin side up, in one layer in a shallow oven-proof dish. Put all the remaining ingredients in a bowl and warm through in the microwave (or a small pan) for 1 minute. Stir to mix everything together and pour over the chicken.

  • 2. Cook in oven (uncovered) for about 35-40 minutes basting every ten minutes or so. Leave to stand for 5 minutes before serving with potatoes and vegetables of your choice.

    • I tried this for the first time last night and was really impressed (so was my husband!). It was absolutely delicious and so easy to prepare. I served it with charlotte potatoes and veg. Thanks so much for posting this recipe.... will definitely be a favourite from now on!

    Ingredients

    • 4 chicken breasts (skin on and part-boned if possible)
    • 1 Grated zest and juice of an orange
    • 1 tablespoon clear honey
    • 1 tablespoon olive oil
    • 2 garlic cloves (chopped)
    • 1 teasppon dried oregano
    • 1tablespoon dark soy sauce
