Method

  • 1. Take 4 chicken breasts and flatten them with a rolling pin.

  • 2. Mix the mayonnaise, the lemon juice and the lemon rind together.

  • 3. Slightly toast the bread, put it in a ag and crumple to make the breadcrumbs.

  • 4. Cover the chicken breast in mustard, dip it into the eggs and the completely coat in breadcrumbs. Repeat for all four chicken breasts.

  • 5. Cook in oven for 25 mins and serve with lemon mayonnaise, salad and potatoes
  • Ingredients

    • 4 chicken breasts
    •  white bread - for breadcrumbs
    • 1 tbsp Dijon mustard
    • 2 tbsp mayonnaise
    • ½ lemon - for juices
    • ¼ lemon rind
    • 2 eggs
