Method

  • Place sugar, water, margerine and fruit in a fairly lge. sauce pan - bring gradually to boil. Remove from heat and add bicarbonate of soda (will froth). Return to heat and simmer for 10 mins. Let cool slightly. Sieve flour & spices into a bowl. Add beaten eggs & fruit mixture. Stir well and put into a greased loaf tin. Bake for about an hour 180c gas mark 4. Test with skewer--- if it comes out dry, loaf is ready.

    • 1 cup water
    • 4 oz. margerine
    • 8 oz. mixed dried fruit
    • 1 tsp. bicarbonate of soda
    • 8 oz. self raising flour
    • 1 level tsp. mixed spice
    • 1 level tsp cinnamon
    • 2 lge eggs (beaten)
    • ½ to 1 cup caster sugar
